fiddlehead season is here!!!

i like eating baby ferns - fiddleheads
you can buy the little bastards frozen
but nothing beats a springtime hike and picking your own fresh off the forest floor

they're in all different stages now depending on how much sunlight they're exposed to - you want to get them when they're small tender and wound up tight like the ones below
as they unfurl and become leafy they're less tasty

steam them with red wine added to the water - serve with melted butter and maybe a dash of vinegar if they seem bitter - you can also fry them up in butter after steaming them a little - simmer in red wine add some garlic a little rosemary
